Beef BurritosServes 100. 8 pounds 10 ounces raw ground beef (no more than 24% fat) Brown ground beef, drain. Add onions, garlic powder, pepper, tomato paste, water and seasonings. Blend well. Simmer for 30 minutes. Combine shredded cheese with meat mixture. Steam tortillas for 3 minutes or until warm. Portion meat mixture with a 1/3 cup scoop onto each tortilla. Fold around meat envelope style. Place folded burritos seam side down on lightly oiled sheet pans (18 x 26 x 1 inches), 33 to 35 burritos per pan. Bake in conventional oven at 375 degrees F for 15 minutes or in convection oven at 325 degrees for 15 minutes. Sprinkle shredded cheese (optional) evenly over burritos before serving. |
