Place chocolate bits and cream in saucepan; cook over low heat, stirring occasionally until melted. Stir in vanilla extract; chill until thickened. Stir chocolate ice cream until smooth; spoon into crust. Spread 3/4 of the chocolate sauce over ice cream; return to freezer until firm. Soften sherbet; spoon over top. Freeze until firm.
